Instagram is a highlight reel. People don’t post bad pictures of themselves or usually brag about when they are having shitty day. They only want you to see the good. The only person you should ever compare yourself to, is the person you were yesterday & try to be better than that today.
I normally eat shrimp salad about three times a week, especially when I don’t really want to cook. I tend to make them different every time & that way we don’t get sick of them. I love love love salad and this one definitely didn’t disappoint.
Heat the pan over medium/high heat with some olive oil. Mix 16/20 (jumbo) shrimp with cajun seasoning and add to the pan. When they’re done, I just let them cool down a bit so they don’t wilt the lettuce. Plus, I don’t like hot ass shrimp in my cold salad.
- Black Beans (sometimes)
Squeeze some lime over the top & a sprinkle of cajun seasoning. I usually add a little Italian dressing just to add some flavor.
So yum and so simple.
I have been wanting to make a white chicken chili for so long now but I never got around to it. The one thing you should know about me, is that I do not follow recipes. I don’t measure spices or really use all of the ingredients a recipe calls for. I kind of just look at a few different recipes, gather an idea of what most consist of, and kind of just wing it.
I make regular chili at least once a week.It’s a staple in our house. I was buying the chili and taco seasoning packets forever, but one day I realized if I turned the damn package over & read it, maybe I could make my own. So freaking easy! I have all that stuff in my cabinet. So from that point on, I made it myself with LESS SALT! What a waste of money that was, and I like the way mine tastes so much better. I can add more of this add less of that to change up the flavor.
With that said this is what I came up with.
What I used:
- olive oil
- 2 boneless skinless chicken breast
- 1-2 cans white beans drained
- 1 can corn
- 1 can diced green chiles
- 1 large poblano pepper
- 1 jalapeno pepper
- 1 yellow onion
- 1 can – chicken broth
- heavy cream about 1/2 cup
- garlic/onion powder
- chili powder
- sour cream
- Chop the chicken into small cubes
- Dice the onion and peppers
- Finely chop cilantro
Heat a large pot on the stove with some olive oil. Add the onion, jalapeno & poblano. Saute until the onion is translucent. Start adding the spices (you can start with a little & add more when you taste it later) . Continue to stir. Add the chicken. Add a few spoonfuls of flour & continue to stir. Slowly add some chicken broth & cream. It should not be soupy but more of a thick consistency. Add the corn, beans and green chiles. Continue to stir and add some more spices as desired. At the end I mix in the chopped cilantro. Whenever the flavor seems right to you, it’s done.
I add cheese, sour cream, avocado, fresh lime juice and we usually have chips on the side. I always add extra jalapeno to mine because I like everything spicy.
